This delicious and Healthy Chocolate Black Bean Brownies Recipe by Arita Bagwandin is a healthy alternative to chocolate brownies. The Black Bean Brownies are flourless brownies, so the beans not only replace flour ie. low carbs, but also add the protein etc that these beans have in them as well as add a nutty flavor.
Healthy Choc Black Bean Brownies Recipe
Ingredients:
- 2 X 410g cans of red kidney or black beans (drained) 90ml Olive / coconut oil
- 6 eggs
- 165ml cocoa powder
- 1/2tsp salt
- 2tsp vanilla essence
- 1 1/2C brown sugar
- 1Tbl ready made coffee
Optional you can add these 3 ingredients in for more of an indulgent brownie:
- 1/2-3/4C peanut butter/ Nutella or caramel
- 3/4C choc chips/chopped chocolate
- 3/4C chopped walnuts/pecans
Method:
Line 16X16cm tray with foil that has been sprayed with nonstick spray.
Preheat oven to 175 degrees Celsius.
In a food processor, purée beans and oil together till smooth and thick. Pour out into a bowl. Add in the eggs, cocoa, vanilla & sugar. Stir well.
Pour into tray. Dollop spoonfuls of peanut butter/Nutella/caramel on top (if using), & using a skewer or knife, make streaks over the mixture, creating a marbled effect. Add nuts, chocolate on top (if using). Bake for 15-20mins or till set.
